Dough for Samosas


  • 1 kg of all-purpose flour
  • 25 grams of yeast
  • 1/4 cup of corn oil
  • 400 cc of lukewarm water
  • 1 teaspoon of salt

Preparation of the Dough:

  1. Begin by preparing the dough.
  2. Mix the dough ingredients and cover to allow it to rise and double in size.
  3. Divide the dough into small, ball-sized portions.
  4. Roll out the dough into a circular shape on a surface dusted with flour.

Filling For Samosas


  • 1 kg of finely minced meat
  • 3 medium-sized onions or 2 green onions (1/2 kg)
  • 3 tomatoes, peeled and seedless, cut into small cubes (1/2 kg plum tomatoes)
  • 1 red bell pepper, finely chopped (optional, generally not used)
  • Juice of 2 or 3 lemons
  • 2 tablespoons of freshly chopped parsley
  • 1 teaspoon of ground chili
  • 2 tablespoons of Baharat (a blend of 7 spices)
  • 1 tablespoon of mint
  • Salt (to taste)

Preparation of the Samosas Filling:

  1. Chop tomatoes, bell peppers or green peppers, parsley, mint, and onions, then add the meat.
  2. Season with salt and add the spices.
  3. Incorporate sumac, baharat, and lemon juice.
  4. Place the raw filling onto the dough discs and shape the fatay.
  5. Arrange the Arab empanadas in a baking dish.
  6. Bake in a preheated oven (200º C) until golden brown.

With one kilogram of meat, you can make more than 36 for Samosas.
